How uncertainty plays a role in consumer decisions

Intervention Description

Researchers monitored the sales of salad dressings before and after the imposition of the Nutrition Labeling and Education Act (NLEA) which mandated that food products were required to sport a nutrition label. Although salad dressings with a low fat content were eager to display their nutrition labels before the NLEA was enacted, salad dressings with high fat content failed to display nutrition labels. Once all salad dressings were required to show nutrition labels, sales of salad dressings that contained the highest levels of fat declined significantly.
